Stello's Gameday Spread

One of our favorite times of the year is Fall! With the cooler temperatures moving in, the leaves changing, and the start of football season, this is the perfect time of year to gather with friends and family and enjoy some tasty food together. Today’s recipe is very simple, but also very suitable for making a gameday spread. Nachos and Wings make the perfect combination to enjoy while your favorite team is playing. Using Stello’s Steel City Chili and Wing Sauces also makes this a very easy recipe to follow.
Stello’s Loaded Chili Nachos
Cooking up a pot of chili can be a time-consuming task. Our Steel City Chili mix takes most of the work out of this process and gives you a homestyle chili that is robust in flavor and texture that the whole gang will love. This is also the main ingredient to our chili nacho recipe. Simply brown up ½ to 1 pound of hamburger in the skillet. Drain any excess oils and then add 1 jar of Stello’s Steel City Chili. Our chili selection is available in different heat/spice levels to meet everyone’s preferences. For a thicker chili, use 1 pound of hamburger per jar. For a thinner chili, use ½ pound.
Once the chili is finished, spread a layer of nacho chips onto a cooking sheet. Generously add the chili on top of the chips along with melted queso cheese, chopped veggies (like tomato and onion), and some Stello’s Pepper Rings and Jalapenos. This is our personal favorite combination of ingredients, but you can create your own spread with your favorite toppings.
Stello’s Wings
The perfect compliment to loaded chili nachos is buffalo chicken wings. Stello’s offers several different wing sauces that can be added direct to the deep friend wings without having to add any other ingredients. From traditional buffalo sauce, to ranch buffalo, to garlic butter sauce, Stello’s has a taste for everyone.

Stello's Homemade Meatballs and Rigatoni

Pasta and meatballs is about as traditional of an Italian Dish as they come. You would think that this combination would be easy for most to master, but sadly many miss the mark when it comes to preparing this eclectic dish. Improperly cooked noodles, runny sauce, or bland meatballs can turn a classic dish into an easily forgettable one. At Stello Foods, we take pride in our Italian Dinners and hope that you enjoy this generational recipe that is a mainstay in our weekly dinner rotation.
Meatballs
1 Pound of Ground Beef
3 Tablespoons Romano Cheese
2 Tablespoons Parsley Flakes
¾ Cup Italian Breadcrumbs
1 Clove Garlic – Chopped
¼ Cup Water
2 Eggs
Salt and Pepper to Taste
Combine ingredients, form into balls on a cookie sheet, and bake at 350 degrees for 30-40 minutes.
Rigatoni
1 Pound of Stello’s Bronze Cut Rigatoni Pasta. Note that these are a premium cut noodle and require 20-30 minutes of cooking time to reach al dente. Although it is a longer cooking time for the noodle, bronze cut pasta from Italy provides a very unique flavor and texture to make a gourmet dish.
Sauce
Normally, this would be the hardest step of the recipe. A good pasta sauce takes time, patience, fresh ingredients, and a special blend of herbs and spices. We have taken the guess work out of this step and offer you dozens of options for sauces. On this particular night, we chose to use Stello’s Roasted Red Pepper Sauce, which offers a fresh red pepper flavor combined with a rich and robust tomato finish that creates a homemade experience that everyone will love. With so many sauce options, you can try other flavors to create your own custom culinary experience based on your flavor preferences. We would love to hear which sauce is your favorite to use.
Bonus
Although not required, we also added some Rosie Ringers on top of our dish to give a little extra flavor and texture.
Stello's Fresh Garden Salsa

There is nothing quite as good as eating a garden-fresh tomato. The crisp and bold flavor can only be found this time of year at local produce stands or straight out of the backyard garden. When tomatoes are in season, you can create some of the best tasting sauces, salsa, and spreads. Today’s recipe is one of our favorite salsa recipes to use whenever the tomatoes are at their freshest.
Step 1 – Dice 6-8 medium to large tomatoes and place into a large bowl.
Step 2 – Once all tomatoes are diced, and into bowl, dump contents into a large strainer to drain off excess water and seeds. Once drained, dump the tomatoes back into the large bowl.
Step 3 – Finely dice up a large red onion and add into bowl.
Step 4 – Dice ½ Cup of Pickled Jalapeno Peppers and add into bowl.
Step 5 – Dice ¼ Cup of Fresh Cilantro and add into bowl.
Step 6 – Sprinkle in 2 packets of Taco Seasoning
Step 7 – Add 2-3 Cups of Stello Food’s Thick and Rich Bloody Mary Mix. The amount of mix can be altered to create either a thicker or thinner salsa. We prefer a thicker salsa, so we only use 2 cups of mix.
Step 8 – Add 3 Tablespoons of Diced Garlic
Step 9 - Mix all ingredients thoroughly and serve immediately
The measurements in this recipe represent our own personal preference. If you would like to have a spicey salsa, you can add more Jalapenos. If you are looking for a more mild flavor, you can cut back on the peppers, or even try Stello’s Fresh Squeezed Bloody Mary Mix, which is less spicey. Feel free to play with the amount of Bloody Mary mix to get the consistency that you prefer. The nice thing about this salsa recipe is that you can tailor it to your own preference. Rosie’s Hot Pepper Mustard - Rosie's Hot Pepper Mustard is made with fresh hot peppers, but don't let the hot part fool you. It is a hot-sweet taste that you get. Our mustard is probably one of the most versatile mustards on the market. It can be used as a regular mustard, or it can be served as dipping mustard for ham and cheese trays, or with pretzels and chips. You can use it with almost any meal that you are making. Mix it in chicken or potato salad. Use it as a bbq or basting sauce on wings or chicken. One of the best uses for our mustard is in deviled eggs.
Steak Marinade Recipe:
Step 1 – Add 1 cup of Rosie’s Hot Pepper Mustard into a mixing bowl
Step 2 – Add ¾ cup of The Old Colony Sauce to the mixture
Step 3 – Add half a cup of heavy whipping cream
Step 4 – Add 2 tablespoons of Ginger
Step 5 – Add 1 tablespoon of Pepper
Step 6 – Mix thoroughly and dip your steaks into the marinade. Be sure to evenly coat both sides of the steak
Step 7 – Grill your steaks over a hot grill until cooked to your preferred temperature

Italian Sausage Hoagie with Rosie's Red Pepper Spread

How do you make an iconic sandwich taste even better? By adding an iconic topping that enhances the flavor to a new level. Today’s “recipe” is more of a simple addition to the traditional Italian Sausage Hoagie. Everyone has their own way of making this classic sandwich, but regardless of your preference, one thing is certain… adding Stello’s Pepper Spread will take your sandwich to a whole new level of flavor. Our Pepper Spread comes in 3 “heat” levels, Hot, Mild, and Sweet. This allows you to customize the flavor experience to everyone’s personal preference. With the main ingredient being FRESH red bell peppers, our pepper spread is the perfect complement to Italian Sausage. Here is how we like to make our Italian Sausage Hoagies:
Step 1: Boil 2 pounds of Italian Sausage for 45 minutes. This will cook the sausage thoroughly.
Step 2: Cut the sausage into 3-4 inch sections and then butterfly in half while keeping the skin in tact
Step 3: Lightly brown the sausage links in a cast iron skillet
Step 4: Slice a sweet onion and red bell pepper in thin slices. Caramelize in oven or skillet
Step 5: Slice a hoagie roll in half and lightly toast the cut sides in the oven
Assemble the hoagie with a bottom layer of provolone cheese slices. Next, top with the browned sausage. Add the caramelized peppers and onions on top of the sausage.
Step 6: This is the most important step and what takes a normal sandwich to a new culinary level. Add a thick layer of Stello’s Pepper Spread to the top half of the bun.

Summertime Spring Pasta Salad

On a hot summer day, sometimes a cooler dish is a great way to beat the heat. Our spring salad recipe is a simple dish that combines cold pasta, fresh garden vegetables, and our special Red Bull Inn Italian Dressing for a treat that is sure to be the hit of any picnic or summer gathering.
Step 1: Boil 1 Pound of Stello Fusilli Pasta (spring shaped noodles)
Step 2: While pasta is cooking, dice up your favorite garden vegetables. This can include tomatoes, cucumbers, carrots, onions, olives, peppers, etc. The idea here is that you can choose the veggies that everyone likes. The fresher the better. This is also a perfect way to use up some of those excess garden vegetables that you have lying around.
Step 3: Combine all diced vegetables in a large mixing bowl and add 1/3 bottle of Red Bull Italian Dressing. Mix thoroughly to ensure all vegetables are coated.
Step 4: Remove pasta from boiling water when cooked al dente. Immediately run under cold water until noodles are cool to the touch.
Step 5: Add cooled pasta into mixing bowl with vegetables. Pour in remaining 2/3 bottle of dressing and mix thoroughly.
Step 6: Chill in refrigerator for at least 1 hour. Serve cold as a side dish. Pairs well with picnic foods like hamburgers, hotdogs, grilled chicken, etc.
While this recipe seems quite simple, it will offer a taste that will be complex and elegant. The secret is in the sauce, or in this case, the dressing. Vodka Penne with Grilled Chicken and Fresh Tomatoes

A well made Vodka Sauce is a tasty alternative to your traditional pasta with red sauce dish. Making homemade Vodka Sauce can be time consuming and challenging to get the proper balance and blend of ingredients. At Stello Foods, we have perfected our own Vodka Sauce recipe that has been passed down through the Stello family for over 3 generations. Now you can create your own Vodka Sauce recipes and have a gourmet and homemade taste straight from the jar. For a busy family, this is a fast way to create meals that taste like they took all day to prepare. Here is a simple recipe idea to get you started:
Vodka Penne with Grilled Chicken and Fresh Tomatoes
Ingredients:
1 Jar, Stello Vodka Sauce
1 Package, Stello Penne Pasta
Stello Grillin’ Spice Seasoning
Trimmed Chicken Breast
Cherry Tomatoes
Fresh Parmesan
Dried Basil
Step 1 : Boil the pasta. Be sure to follow cooking times on the package. Stello Pasta is a special cut of pasta that takes longer to cook, but provides a distinctive flavor and texture compared to other box pasta.
Step 2: While pasta is cooking, season chicken breast with Grillin’ Spice seasoning. This unique blend of spices will actually make the chicken taste like it was cooked over a charcoal grill. Once chicken is seasoned, grill on both sides until fully cooked and slightly charred.
Step 3: Drain pasta into bowl and combine with halved cherry tomatoes and Vodka Sauce. Mix thoroughly and divide equal portions on to plates. Top with fresh parmesan and basil.
Step 4: Slice chicken into thin strips and place on top of pasta.
Enjoy! Pairs well with White Wine.
This very simple recipe is easy to make and will certainly be a family favorite. Chicken can also be substituted with Shrimp or Italian Sausage. For a creamier dish, try adding an extra half jar of Stello’s Vodka Sauce to the recipe.
